    Ingredients
    • 29 Oz Can Diced Tomatoes preferably Fire Roasted
    • 1 Medium Onion, diced
    • 1-3 Cloves Garlic Minced
    • 16 Oz Can Pinto Beans rinsed and drained
    • 16 Oz Can Kidney Beans rinsed and drained
    • 3/4 Cup Frozen Corn Kernels can also be fire roasted
    • 1 Cup Dry Quinoa
    • 1 or 2 Chilies in adobo chopped remove seeds to lessen heat
    • 1 Tsp Cumin
    • 1 Tsp Smoked Paprika
    • 1 Tsp Chili Powder
    • 1 Tbsp olive oil
    • Salt and Pepper to taste

    Instructions
    1. In a large pot, sauté the onion and pepper in the oil until soft. Add garlic and cook for 30 seconds.
    2. Put all the other ingredients in the pot except the quinoa. Bring to a bubble.
    3. Add the quinoa and cook until the grain is translucent for about 30 minutes, stirring frequently.
    4. Top with anything you like or just dig in!
